Not much to this one: read, repeat, and eat!
I soaked wood chips in Jack Daniels whiskey and apple cider for about 30 minutes and put them on the charcoal once it was going mildly, careful not to let temp get higher than 250 degrees. I like my steaks with Montreal Steak Seasoning, and the little wife likes hers a bit more simple with Johnny’s Seasoning Salt – do them however you like them cause you’re going to get that nice smoky flavor no matter what you sprinkle on these bad boys. I put the seasoned sirloin steaks on the grill and let them smoke for about 20 minutes before taking them off and letting them rest while I cranked up the temperature to 550 degrees. Once the grill was hot enough I grilled the steaks directly for 5 minutes, flipping them and cooking for another 5 minutes, and then flipping them one last time for another 5 minutes. Cross hatch if you must – and lets be honest you will. Total grill time at 550 degrees was 15 minutes. If you prefer steak more rare lighten up on the time and of course if you prefer it more done like President Elect Donald J. Trump, let it sizzle a little longer.
